Eating in season: August

August is a month of transitions. Just as we can go from playing at the pool to shopping for school supplies, we see the blending of summer with early fall on our plate, as well. You can still find all of summer’s greatest hits at the farm stands this month, but you’ll also start to see apples, hard squashes and other harbingers of cooler weather mixed in.

What’s in season this month in Fredericksburg?

Blackberries, blueberries and raspberries are still going strong, as are cantaloupe, watermelon and other melons, peaches and nectarines. Concord grapes come in this month, and if you’ve never tasted locally grown grapes, they’ve got a lot more flavor than the ones you buy at the grocery store–just don’t eat the seeds. Apples, butternut and other smaller winter squashes can also be found in the mix this month. Round out your plate with cucumbers, green beans, peppers, summer squash, zucchini, tomatoes, corn, eggplant, okra and the rest of the summer lineup.

What to cook in August

Here are a few recipes to help you make the most of August’s local produce.

  • If you’ve got an abundance of ripe summer fruit, consider making a shrub, a drinkable vinegar that can be used as a cocktail ingredient or mixed with seltzer water.
  • Peach and apple crisp
  • Summer vegetable lasagna – Make this in a foil dish and freeze it to preserve some of these summer flavors, and to save yourself time when you get busy in the fall.
