  • 2 cans young green jackfruit in water or brine (not in syrup)
  • 1 cup BBQ sauce (your favorite variety)
  • 1 tablespoon vegetable oil
  • 1 small red onion, thinly sliced
  • Pickles, thinly sliced or diced
  • Lime wedges, for serving
  • 8 small corn tortillas
  • Optional toppings: Chopped cilantro, avocado slices, vegan sour cream or yogurt

  1. Rinse and drain the canned jackfruit. Cut off the hard core from each piece and discard. Shred the jackfruit using your hands or two forks to create a pulled texture.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the sliced red onion and sauté until it starts to soften, about 2-3 minutes.
  3. Add the shredded jackfruit to the skillet and cook for another 2 minutes, stirring occasionally.
  4. Pour the BBQ sauce over the jackfruit and onions, stirring well to coat. Reduce the heat to low and let it simmer for 10-15 minutes, allowing the flavors to meld together.
  5. Warm the corn tortillas in a dry skillet or microwave.
  6. To assemble the tacos, place a spoonful of the BBQ jackfruit mixture onto each tortilla.
  7. Top with sliced pickles.
  8. Squeeze fresh lime juice over the tacos.
  9. If desired, add optional toppings such as chopped cilantro, avocado slices, or vegan sour cream or yogurt.
  10. Serve the BBQ Jackfruit Tacos and enjoy!
