Taco Tuesday: BBQ Jackfruit Tacos

These BBQ Jackfruit Tacos offer a tasty and plant-based option for Taco Tuesday. The tender and flavorful jackfruit, smothered in tangy BBQ sauce, pairs wonderfully with the crispness of the red onions and pickles. Ingredients:
- 2 cans young green jackfruit in water or brine (not in syrup)
- 1 cup BBQ sauce (your favorite variety)
- 1 tablespoon vegetable oil
- 1 small red onion, thinly sliced
- Pickles, thinly sliced or diced
- Lime wedges, for serving
- 8 small corn tortillas
- Optional toppings: Chopped cilantro, avocado slices, vegan sour cream or yogurt
Instructions:
- Rinse and drain the canned jackfruit. Cut off the hard core from each piece and discard. Shred the jackfruit using your hands or two forks to create a pulled texture.
- Heat the vegetable oil in a large skillet over medium heat. Add the sliced red onion and sauté until it starts to soften, about 2-3 minutes.
- Add the shredded jackfruit to the skillet and cook for another 2 minutes, stirring occasionally.
- Pour the BBQ sauce over the jackfruit and onions, stirring well to coat. Reduce the heat to low and let it simmer for 10-15 minutes, allowing the flavors to meld together.
- Warm the corn tortillas in a dry skillet or microwave.
- To assemble the tacos, place a spoonful of the BBQ jackfruit mixture onto each tortilla.
- Top with sliced pickles.
- Squeeze fresh lime juice over the tacos.
