Taco Tuesday: Breakfast Tacos

These Breakfast Tacos are a delicious and satisfying option for Taco Tuesday. The combination of fluffy scrambled eggs, crispy bacon and/or sausage, melted cheese, tangy salsa, and fresh green onions creates a flavorful breakfast experience. Feel free to customize the toppings and add any additional ingredients you desire, such as avocado or sour cream. Enjoy your breakfast-inspired tacos!
Ingredients:
- 8 small flour tortillas
- 6 large eggs
- 4-6 strips of crispy bacon and/or cooked sausage, crumbled or sliced
- 1 cup shredded cheese (such as cheddar, Monterey Jack, or Mexican blend)
- 1/2 cup salsa (your favorite variety)
- 2 green onions, finely chopped
- Salt and pepper to taste
Instructions:
- Warm the tortillas in a dry skillet or microwave, and set them aside, covered with a clean kitchen towel to keep them warm.
- In a bowl, whisk the eggs together until well beaten. Season with salt and pepper.
- Heat a non-stick skillet over medium heat and coat it with cooking spray or a small amount of oil.
- Pour the beaten eggs into the skillet and cook, stirring occasionally, until they are scrambled and cooked to your desired level of doneness.
- While the eggs are cooking, prepare the crispy bacon and/or cooked sausage, and crumble or slice them.
- To assemble the tacos, place a spoonful of the scrambled eggs onto each tortilla.
- Top with crumbled crispy bacon and/or sliced sausage.
- Sprinkle shredded cheese over the eggs and meat.
- Add a spoonful of salsa on top.
- Garnish each taco with a sprinkle of chopped green onions.
