Taco Tuesday: Breakfast Tacos

These Breakfast Tacos are a delicious and satisfying option for Taco Tuesday. The combination of fluffy scrambled eggs, crispy bacon and/or sausage, melted cheese, tangy salsa, and fresh green onions creates a flavorful breakfast experience. Feel free to customize the toppings and add any additional ingredients you desire, such as avocado or sour cream. Enjoy your breakfast-inspired tacos!


  • 8 small flour tortillas
  • 6 large eggs
  • 4-6 strips of crispy bacon and/or cooked sausage, crumbled or sliced
  • 1 cup shredded cheese (such as cheddar, Monterey Jack, or Mexican blend)
  • 1/2 cup salsa (your favorite variety)
  • 2 green onions, finely chopped
  • Salt and pepper to taste


  1. Warm the tortillas in a dry skillet or microwave, and set them aside, covered with a clean kitchen towel to keep them warm.
  2. In a bowl, whisk the eggs together until well beaten. Season with salt and pepper.
  3. Heat a non-stick skillet over medium heat and coat it with cooking spray or a small amount of oil.
  4. Pour the beaten eggs into the skillet and cook, stirring occasionally, until they are scrambled and cooked to your desired level of doneness.
  5. While the eggs are cooking, prepare the crispy bacon and/or cooked sausage, and crumble or slice them.
  6. To assemble the tacos, place a spoonful of the scrambled eggs onto each tortilla.
  7. Top with crumbled crispy bacon and/or sliced sausage.
  8. Sprinkle shredded cheese over the eggs and meat.
  9. Add a spoonful of salsa on top.
  10. Garnish each taco with a sprinkle of chopped green onions.
  11. Serve the Breakfast Tacos warm and enjoy!
