For the buffalo chicken:

  • 2 cups cooked and shredded chicken (rotisserie chicken works well)
  • 1/4 cup hot sauce
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the tacos:

  • 8 small flour tortillas
  • Shredded lettuce
  • Ranch dressing (homemade or store-bought)
  • Crumbled blue cheese (or blue cheese dressing)
  • Chopped fresh cilantro (optional, for garnish)

  1. In a bowl, combine the hot sauce, melted butter, honey, garlic powder, salt, and pepper. Stir well to make the buffalo sauce.
  2. Add the shredded chicken to the bowl and toss it in the buffalo sauce until it is evenly coated. Set it aside to marinate for about 10 minutes.
  3. Meanwhile, warm the flour tortillas in a dry skillet or microwave.
  4. Heat a non-stick skillet over medium heat and add the marinated buffalo chicken. Cook for 2-3 minutes, stirring occasionally, until the chicken is heated through.
  5. To assemble the tacos, place a spoonful of the buffalo chicken onto each tortilla.
  6. Top with shredded lettuce, a drizzle of ranch dressing, and crumbled blue cheese (or blue cheese dressing).
  7. Garnish with chopped fresh cilantro, if desired.
  8. Serve the Buffalo Chicken Tacos and enjoy!
