Taco Tuesday: Shrimp Tacos

Ingredients:
For the shrimp:
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Juice of 1 lime
For the tacos:
- 8 small tortillas
- Shredded cabbage or lettuce
- Sliced avocado
- Diced tomatoes
- Chopped cilantro
- Lime wedges
- Hot sauce or salsa (optional)
Instructions:
- In a bowl, combine the olive oil, minced garlic, chili powder, cumin powder, paprika, salt, pepper, and lime juice. Stir well to make a marinade.
- Add the shrimp to the marinade and toss to coat them evenly. Let the shrimp marinate for about 15-20 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Skewer the marinated shrimp or use a grill basket to prevent them from falling through the grates.
- Place the shrimp on the grill and cook for about 2-3 minutes per side until they turn pink and are cooked through. Be careful not to overcook them as they can become rubbery.
- Remove the shrimp from the grill and let them cool for a minute. Remove them from the skewers if using.
- Warm the tortillas in a dry skillet or microwave.
- Assemble the tacos by placing a few shrimp on each tortilla.
- Top with shredded cabbage or lettuce, sliced avocado, diced tomatoes, and chopped cilantro.
- Squeeze fresh lime juice over the tacos and serve them with lime wedges and hot sauce or salsa on the side, if desired.
