Taco Tuesday: Shrimp Tacos

These grilled shrimp tacos are a delicious and satisfying option for Taco Tuesday. The marinated and grilled shrimp, along with the fresh toppings, create a burst of flavors and textures. Ingredients:

For the shrimp:

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime

For the tacos:

  • 8 small tortillas
  • Shredded cabbage or lettuce
  • Sliced avocado
  • Diced tomatoes
  • Chopped cilantro
  • Lime wedges
  • Hot sauce or salsa (optional)

Instructions:

  1. In a bowl, combine the olive oil, minced garlic, chili powder, cumin powder, paprika, salt, pepper, and lime juice. Stir well to make a marinade.
  2. Add the shrimp to the marinade and toss to coat them evenly. Let the shrimp marinate for about 15-20 minutes.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Skewer the marinated shrimp or use a grill basket to prevent them from falling through the grates.
  5. Place the shrimp on the grill and cook for about 2-3 minutes per side until they turn pink and are cooked through. Be careful not to overcook them as they can become rubbery.
  6. Remove the shrimp from the grill and let them cool for a minute. Remove them from the skewers if using.
  7. Warm the tortillas in a dry skillet or microwave.
  8. Assemble the tacos by placing a few shrimp on each tortilla.
  9. Top with shredded cabbage or lettuce, sliced avocado, diced tomatoes, and chopped cilantro.
  10. Squeeze fresh lime juice over the tacos and serve them with lime wedges and hot sauce or salsa on the side, if desired.
