Taco Tuesday: Steak Tacos with Chimichurri

These steak tacos with chimichurri offer a burst of flavor with tender grilled steak, zesty chimichurri sauce, and the added freshness of diced tomatoes and crumbled queso fresco. Ingredients:
For the steak:
- 1 pound flank steak or skirt steak
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
For the chimichurri sauce:
- 1 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 3 cloves garlic, minced
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
For the tacos:
- 8 small flour tortillas
- Diced tomatoes
- Crumbled queso fresco (or your preferred cheese)
- Lime wedges (for serving)
Instructions:
- In a bowl, combine the olive oil, minced garlic, ground cumin, smoked paprika, salt, and pepper. Stir well to make a marinade.
- Place the flank steak or skirt steak in a shallow dish and pour the marinade over it. Coat the steak well and let it marinate for at least 30 minutes, or up to overnight in the refrigerator.
- Preheat your grill or grill pan over medium-high heat.
- Remove the steak from the marinade and let any excess drip off. Grill the steak for about 4-6 minutes per side, or until it reaches your desired level of doneness.
- Remove the steak from the grill and let it rest for a few minutes. Then, slice it thinly against the grain.
- While the steak is resting, prepare the chimichurri sauce. In a bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Mix well to combine.
- Warm the flour tortillas in a dry skillet or microwave.
- To assemble the tacos, place a few slices of grilled steak onto each tortilla.
- Top with a spoonful of chimichurri sauce, diced tomatoes, and crumbled queso fresco.
