For the steak:

  • 1 pound flank steak or skirt steak
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For the chimichurri sauce:

  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste

For the tacos:

  • 8 small flour tortillas
  • Diced tomatoes
  • Crumbled queso fresco (or your preferred cheese)
  • Lime wedges (for serving)

  1. In a bowl, combine the olive oil, minced garlic, ground cumin, smoked paprika, salt, and pepper. Stir well to make a marinade.
  2. Place the flank steak or skirt steak in a shallow dish and pour the marinade over it. Coat the steak well and let it marinate for at least 30 minutes, or up to overnight in the refrigerator.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove the steak from the marinade and let any excess drip off. Grill the steak for about 4-6 minutes per side, or until it reaches your desired level of doneness.
  5. Remove the steak from the grill and let it rest for a few minutes. Then, slice it thinly against the grain.
  6. While the steak is resting, prepare the chimichurri sauce. In a bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Mix well to combine.
  7. Warm the flour tortillas in a dry skillet or microwave.
  8. To assemble the tacos, place a few slices of grilled steak onto each tortilla.
  9. Top with a spoonful of chimichurri sauce, diced tomatoes, and crumbled queso fresco.
  10. Serve the Steak Tacos with Chimichurri and enjoy!
