Taco Tuesday: Veggie Tacos

Ingredients:

  • 1 tablespoon of olive oil
  • 1 small onion, diced
  • 2 bell peppers (any color), thinly sliced
  • 1 cup of corn kernels (fresh or frozen)
  • 1 can (15 ounces) of black beans, drained and rinsed
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Toppings: diced tomatoes, shredded lettuce, sliced avocado, chopped cilantro, sour cream, salsa, etc.

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and sliced bell peppers to the skillet. Sauté for 5-6 minutes, or until the vegetables become tender and slightly caramelized.
  3. Add the corn kernels to the skillet and cook for an additional 2-3 minutes.
  4. Stir in the black beans, chili powder, ground cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes to allow the flavors to meld together.
  5. Warm the flour tortillas in a separate pan or oven according to package instructions.
  6. Fill each tortilla with a generous amount of the veggie mixture.
  7. Top with your favorite toppings, such as diced tomatoes, shredded lettuce, sliced avocado, chopped cilantro, sour cream, salsa, or any other toppings of your choice.
  8. Serve the veggie tacos warm and enjoy!
