Fresh and Flavorful Asparagus & Lemon Risotto

Ingredients:
- 1 cup Arborio rice
- 1 bunch fresh asparagus, trimmed and cut into 1-inch pieces
- 4 cups vegetable broth, warmed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup dry white wine
- Zest and juice of 1 lemon
- ½ cup grated Parmesan cheese
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions:
- Sauté the Aromatics: In a large pan, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3 minutes. Stir in the garlic and cook for another minute.
- Toast the Rice: Add the Arborio rice to the pan, stirring to coat it with the oil. Toast for about 2 minutes until the edges of the rice become slightly translucent.
- Deglaze with Wine: Pour in the white wine and let it simmer until mostly absorbed, stirring occasionally.
- Cook the Risotto: Add the warmed vegetable broth one ladleful at a time, stirring frequently. Allow each addition to be mostly absorbed before adding more. Continue this process for about 15-18 minutes until the rice is creamy and tender.
- Add the Asparagus: When the rice is nearly done, stir in the asparagus pieces and cook for another 3-4 minutes until tender but still bright green.
- Finish the Dish: Remove from heat and stir in the butter, Parmesan cheese, lemon zest, and lemon juice. Season with salt and pepper to taste.
