Ingredients (Serves 2-3)

For the Chicken:

  • 2 boneless, skinless chicken breasts (local if possible!)

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp dried oregano (or fresh basil from the Co-op!)

For the Salad:

  • 4 cups mixed greens (romaine, arugula, or spinach)

  • 1 cup cherry tomatoes, halved

  • ½ cucumber, sliced

  • ¼ red onion, thinly sliced

  • ¼ cup feta cheese (optional, but delicious!)

  • ¼ cup fresh herbs (parsley, basil, or mint)

For the Lemon Dressing:

  • 3 tbsp olive oil

  • Juice of 1 lemon

  • 1 tsp honey (local if possible!)

  • 1 tsp Dijon mustard

  • ½ tsp salt

  • ½ tsp black pepper


How to Make It

🥗 Step 1: Cook the Chicken

  • Heat olive oil in a skillet over medium heat.

  • Season chicken with garlic powder, salt, pepper, and oregano.

  • Cook for 5-6 minutes per side until golden brown and fully cooked.

  • Let rest for a few minutes, then slice into thin strips.

  • In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
