Watermelon & Feta Salad with Mint
As the days get longer and warmer, few things say “summer” like a crisp, juicy slice of watermelon. At the Fredericksburg Food Co-op, we love celebrating seasonal produce — and right now, watermelon is stealing the show. Whether you’re planning a picnic, looking for a light lunch, or just want something refreshing, this Watermelon & Feta Salad with Mint is your go-to recipe. It’s quick to prepare, stunning on the plate, and the perfect blend of sweet, salty, and fresh.
Why Watermelon?
Watermelon isn’t just a hydrating summer staple. It’s loaded with vitamins A and C, antioxidants like lycopene, and it’s naturally low in calories. Plus, it pairs beautifully with savory ingredients, like tangy feta and aromatic mint.
