Fredericksburg Today reports on a new UMW course called Alleviating Food Waste, which explores the root causes of unused food as well as ways in which it can be remedied. Students documented expired food products at the Food Co-op, created tasty dishes with soon-to-be discarded items, and cooked up campaigns for saving imperfect produce.

The Sustainability Award recognizes City businesses that commit to adopting environmentally sustainable practices in their operations. The Food Co-op has rooted itself into the community and has become a hub for locally sourced food, entertainment, lifestyle education and so much more. They had their grand opening in May, yet some folks might not have visited yet.
