Cozy Fall Recipe: Butternut Squash & Sage Cream Pasta

Get into the autumn spirit with this creamy Butternut
Squash & Sage Pasta—made with ingredients right
from your Fredericksburg Food Co-op! Perfect for a
cozy night in. 🍁
Ingredients:
12 oz pasta
1 small butternut squash, cubed
Olive oil, salt, pepper
1/2 cup heavy cream or coconut milk
1/2 cup broth
2 cloves garlic, minced
Parmesan (optional)
Fresh sage leaves
Nutmeg, crushed red pepper flakes
Toasted pecans or walnuts
Instructions:
1. Roast squash with olive oil, salt, and pepper at 400
°F for 25 mins.
2. Cook pasta (save a little pasta water).
3. Infuse sage in skillet until crispy, then set aside.
4. Make sauce: sauté garlic, add roasted squash, broth,
and cream. Mash until smooth.
5. Season & toss with pasta. Garnish with sage and
nuts.
