- 1 cup butternut squash, cubed
- 1 can (14 oz) diced tomatoes, with juice
- 6 cups vegetable broth (look for low-sodium, organic broth at the Co-op)
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 can (15 oz) white beans or chickpeas, drained and rinsed
- 2 cups chopped kale or spinach
- Optional garnish: freshly grated Parmesan cheese or a drizzle of balsamic glaze
Instructions
- Prep your ingredients: Gather all your fresh produce and pantry items from the Co-op to make prepping a breeze.
