A Taste of Spring: Celebrating Seasonal Veggies at the Fredericksburg Food Co-op

As winter fades and sunshine stretches into the evening, spring arrives — and so does a burst of fresh, local flavor at the Fredericksburg Food Co-op. This is the season of new growth, and the shelves and produce bins are filling up with the first tender vegetables of the year. From crisp radishes to leafy greens and just-picked asparagus from Snead’s Farm, there’s never been a better time to eat with the season.

🌿 What’s in Season Right Now?

Spring veggies start popping up in March and hit their stride through April and May. Here are a few of our favorites — some of which you’ll find fresh and local right here at the Co-op:

🥬 Spinach, Arugula & Other Greens

Tender greens love cool spring weather. We’re stocked with crisp, flavorful varieties that are great for salads, stir-fries, or blending into smoothies. Pro tip: toss fresh arugula on pizza or pasta for a peppery kick!

🌱 Radishes

Crunchy and colorful, radishes are a must-have this season. Slice them onto toast with butter and sea salt, or quick-pickle them for a tangy topping. Keep an eye out for vibrant pink bunches in the produce section!

🌿 Spring Onions & Scallions

With a milder flavor than full-grown onions, these tender alliums are perfect for grilling, stirring into soups, or mixing into dips and dressings.

🫛 Peas

Sugar snap peas and snow peas are springtime essentials — sweet, crisp, and so snackable. Try tossing them into grain bowls or pasta salads for a fresh crunch.

🥕 Early Carrots & Beets

You might spot early harvests of these root veggies soon! Roast them, grate them raw into slaw, or sauté the beet greens with garlic and olive oil.

🌟 Asparagus from Snead’s Farm

We’re thrilled to have locally grown asparagus from our friends at Snead’s Farm — and you can taste the difference. These firm, flavorful spears are harvested just up the road, and they shine when roasted, grilled, or added to pasta and quiche.
